Char Sui Glutinous Rice Parcels in Lotus Leaves

This is probably my signature dish. Not to brag but it's rare that I get cancellations when I invite friends over to have this!



Ingredients

8 lotus leaves soaked for 30 mins
2 cups glutinous rice
3 chicken breasts minced
8 hydrated black mushrooms
1 Chinese sausage diced
4 tablespoons hoisin
4 tablespoons soy
4 tablespoons oyster sauce
4 tablespoons sugar
1 tablespoon sesame seed oil

Boil the rice and allow to cool. Mix chicken, hoisin, soy, oyster sauce, sugar, sausage, oil, and diced black mushroom. Halve the lotus leaves and put a dollop of rice in it. Add a dollop of the char sui mix and fold into a package. Tying the package with strings will stop it unfurling.

Steam packages for 30 minutes and serve. Don't eat the leaf!
